Chicken Artichoke Pesto Calzones

Recently I posted about the delicious chicken pesto pizza we had for dinner last week.  After that dinner, I had leftover grilled chicken pieces, leftover pesto, mozzarella cheese and half a batch of my beloved pizza crust in the freezer.  In other words, all I needed to make this dinner was artichokes.  This was a wonderful quick and easy dinner with all of those ingredients ready to go.  I used canned artichokes for the sake of simplicity.  I probably added about half a can, but I think I would add even more next time.  The chicken-artichoke combo is fantastic!  I split the pizza dough into two portions to make two large calzones, but you could certainly make more small portions if desired.  Can’t wait to make these again.

Chicken Artichoke Pesto Calzones
1/2 batch perfect pizza crust dough, at room temperature
Pesto (recipe found here)
Grilled chicken, cut into bite-sized pieces
Canned artichokes, drained and coarsely chopped
Shredded mozzarella cheese
Olive oil, for brushing

Preheat the oven to 500 degrees F.  Place a pizza stone in the oven and allow it to heat up, at least 30 minutes.  On a lightly floured work surface, divide the pizza dough into two (or more) equal pieces.  Stretch or roll out each piece into a circle, about 7-8 inches in diameter.  On one half of each dough round, spread a layer of pesto, leaving a half-inch border around the edge.  Top with grilled chicken pieces and artichokes.  Sprinkle with mozzarella cheese.  

Fold the other half of the dough over to cover the toppings and form a semi-circle.  Press the free edges of dough together to seal the filling inside.  Carefully transfer the finished calzones to the preheated pizza stone.  Brush the tops lightly with olive oil.  Bake until golden brown, about 13-15 minutes.

Aww, I must have read the chicken artichoke pizza post last week and kept it in the depths of my sub-conscious because while cleaning out the freezer this weekend and realizing we seem to have a good quantity of frozen artichoke I decided to make chicken, spinach, artichoke lasagna. Thanks for the inspiration.

    Wow, it looks delicious, got a question (might sound stupid, yeah I’m a newbie:) I was wondering what adjustments we would need to do if we don’t have a pizza stone? Thanks you

    • Hi Cathy,
      If you don’t have a pizza stone, I would just use a large baking sheet turned upside down (so you will put the calzones on the bottom of the baking sheet). It won’t be quite the same, but basically the whole point is to have a well preheated surface to put the calzones on so that the dough on the bottom starts cooking instantly and becomes crispy.

Now that I have tried pizza, the next step is most obvioulsy calzone and here you are providing me with the impetus. I do have my dough in the freezer, and I should have some leftover sausage so its sausage calzone on Friday! Bring it on!

  17. I absolutely LOVED these! The dough is definitely my favorite recipe that I have made yet and the filling is fantastic! Along with the other fillings, I used an Italian blend of cheeses and got the best of both worlds, the wonderful flavor of Parmesan, and the creaminess of provolone. LOVE IT!!!

  19. I made these last night and they were SO GOOD! My husband never likes things like this, so I made him a couple BBQ chicken ones instead (using BBQ sauce, chicken, and cheese). He ended up loving your recipe and the BBQ one!!! That just goes to show how great these are! 😉

  21. Do you think I could use puff pastry instead of the pizza dough?

    • Hi Ashley,
      I really don’t think puff pastry would be a good substitute in this case. I think if you wanted to use puff pastry, you could maybe do some small tartlets with the same filling, but I probably wouldn’t go the calzone route.
