Chicken Ranch Pizza

I’m sure I could have made this post infinitely more popular by adding the word “bacon” to the title, or to the ingredient list.  Though I’m definitely learning to appreciate bacon in some contexts, I still don’t love it quite the way so many people seem to.  But that’s the great thing about pizza – it’s so easy to add or omit ingredients to suit your tastes.  If you’re one of those serious bacon lovers, than by all means, add some!  I’m sure it would be great.  This pizza has been a favorite in our house for a long time.  With Ranch dressing for the sauce, lots of cheese, grilled chicken, tomatoes and green onions, it’s a nice alternative to your usual pizza with red sauce.  (Don’t get me wrong, I love pizza with red sauce…but I’m always looking for more ways to have pizza!)  I may even try it with the bacon next time.  Enjoy!

Chicken Ranch Pizza

½ batch of perfect pizza crust
¼ cup Ranch dressing
¾ cup shredded mozzarella cheese
½-1 grilled chicken breast, chopped into bite-sized pieces
1 tomato, seeded and diced
2-3 green onions, chopped
¾ cup shredded cheddar cheese

Preheat the oven and a pizza stone to 500° F.  Allow the stone to heat for at least 30 minutes.  In the mean time, cut a round of parchment paper the size of your pizza stone.  (Alternatively, use a pizza peel.)  Sprinkle lightly with cornmeal or semolina flour.  Gently roll out the pizza dough into a large circle, leaving a thicker ring around the edge for the crust.  Spread the Ranch dressing in a thin layer evenly over the unbaked crust.  Sprinkle with shredded mozzarella.  Top with grilled chicken, tomato and green onions.  Sprinkle with shredded cheddar.  Once assembled, carefully transfer the parchment round and pizza to the preheated baking stone and return to the oven.  Bake for 10-12 minutes, or until the cheese is melted and browned.  Slice, serve, and enjoy!

  1. love it Annie! i had no concept of what bacon was on pizza until i moved to CT (pizza places in NY don’t even have it as topping option) but Kyle and i are both in love with it. this pizza may just have to go on the menu this weekend since i’ve got some frozen perfect pizza dough waiting in the wings.

  6. Lately I’ve been getting bored with the same ol’ Friday Night pizza. I may try it your way this week, although it may be risky without the cheese (lactose intolerance. I hate my stomach). Roasted broccoli may do the trick; it goes great with ranch.

    • Maria,
      The parchment paper is my easy way of transferring the pizza from work surface to the pizza stone. If you have a pizza peel, you don’t need the parchment paper. But I find it basically impossible to transfer the pizza without one or the other.

      • you can also use a large wooden cutting board as a work surface then and then to transfer the pizza to the stone if you don’t have a pizza peel or any parchment paper on hand.

      • Thanks for the reply. I try to get my pizza on the stone without anything and it is a BIG pain! But, do you just slide the pizza off of the parchment paper or keep it with the parchment paper on the stone? Thanks again!

      • Leave it on the parchment paper. It would be impossible otherwise.

      • Does the crust still come out crispy since it’s not making direct contact with the stone??

      • The parchment paper has no effect on the texture. The crust is still fantastic – crispy on the bottom and softer on top. It is, after all, paper thin, and heat is conducted through it. The key is the preheating of the pizza stone. It starts baking as soon as it makes contact.

  24. I just made this for dinner last night, I’ve been craving it since you posted it but just haven’t had the courage to try the pizza crust. I’ve never done pizza crust before and your instructions were perfect!! I can’t believe how amazing the whole thing turned out. My husband is a pizza fanatic and gave this two thumbs up.   25. It was delicious! I don’t know which I like better, this crust (which was PERFECT!) or your Chicago deep dish pizza. I love all your recipes! Now you just need to find the perfect whole wheat crust, I’d love to make something like California Pizza Kitchen’s Honey Whole Wheat.
