Banana Berry Muffins


Want to know a secret?  These are healthy muffins.  Yes, they have bananas and berries, but they also have bran in them.  Wait, wait!  Don’t run in the other direction (as I almost did when I read that).  These are healthy muffins that also taste really good.  So good I ate them for breakfast daily, and sometimes as an afternoon snack as well.  And, I felt far less guilty about that second muffin than I would have if they had been a typical muffin – you know, the sort that is more of an excuse to eat cake for breakfast, though I do love those too.  Not only do they have bran, but they contain no added sugar.  I was definitely skeptical before trying them, but I was very pleased with the way they turned out.  The banana and berry flavors compliment each other nicely, and provide plenty of natural sweetness along with the honey and orange juice.  You could certainly make these using only one variety of berry but I really enjoyed the combination and would definitely make them this way again.

Banana Berry Muffins
Printer-Friendly Version

Yield: 10-12 muffins
Ingredients:
1¼ cups all-purpose flour
½ cup oat bran
¼ tsp. salt
2½ tbsp. nonfat dry milk powder
1 tsp. baking powder
¼ tsp. baking soda
1½ large bananas
1 egg white
¼ cup honey
1 tbsp. unsalted butter, melted
½ cup orange juice
¾ cup fresh blueberries
¾ cup fresh raspberries

Directions:
Preheat the oven to 375˚ F.  Line a muffin pan with paper liners.  In a medium bowl, combine the flour, oat bran, salt, milk powder, baking powder, and baking soda.  Stir together with a fork; set aside.

In the bowl of a stand mixer fitted with the paddle attachment, mash together the banana and egg white until the mixture is well blended and slightly frothy.  Stir in the honey, butter and orange juice, and mix to blend.   Mix in the dry ingredients just until incorporated.  Gently fold in the fresh berries with a spatula until evenly incorporated.

Evenly divide the batter between the prepared muffin liners.  Bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.  Let cool in the pan about 5 minutes, then transfer to a wire rack to cool completely.

  3. they do sound delicious! … although 1/4 c. honey is not a lot, and not technically “sugar,” it does seem to cover the “sweetener” category and seems a little funny to say “no added sugar.” but i’m still really looking forward to trying them, maybe with some frozen mixed berries i have on hand 🙂 thank you!

      Honey is a natural sweetener that lots of people use in “healthy” recipes to avoid using actual sugar. But, honey is not in fact sugar, so I think it’s fine to say that.

  4. I’ve made something like this before, but I put a little dollop of strawberry cream cheese in the middle. I think it was from “eat shrink and be merry”. These look just as good!

      No, not stupid! It is not the same as oatmeal, but (at least in my store) is found right next to the oatmeal.

  9. Have you ever used frozen fruits in this recipe? I thought I’d try them since fresh fruits are so pricy now. I would not thaw the fruits out first; what do you think?

      I’ve only made these muffins once so far but I used fresh berries because I always prefer them. However, you can always substitute frozen berries for fresh in such recipes, just leave them frozen and mix them into the batter.

  12. Can regular nonfat milk be used in place of the dry milk?

      I’m sure that it can but I don’t know the substitution ratio. You can Google that, but you’d probably also have to adjust the other liquids accordingly.

      Yes, you could substitute regular milk but you would have to modify to other liquids in the recipe as well. I don’t know what the changes would have to be, or the correct substitution ratios.

  14. These sound right up my alley. I love eating healthy muffins for snacks. If I want a doozy of a cake fix, I’ll eat cake, but for muffins I definitely prefer the healthy ones. I often alter the ingredients of mine to add more banana, less fat, whole grains, etc. Good work!

  18. Hi Annie, quick question… did you use the same type of pan you use for cupcakes or one of those pans that is bigger. Just wondering if my cupcake pan is the right one or if I need to buy a muffin pan specifically.

      It’s the same pan. The larger pans are called jumbo muffin pans and I don’t have one.

  19. I’m always on the look out for a healthy muffin recipe! I love muffins that taste like cake of course, but for a weekday it’s nice to have something a little lighter. The berries have already started to go on sale so I will make these muffins soon!

  22. Hm these look great, but nonfat dry milk powder? Is there a reason for not using milk? And would using milk be ok, if other liquids were modified?

      I’m sure you could substitute milk and modify the other liquids, though I don’t know what the substitutions would be.

  23. I made these over the weekend to have when my grandmother arrives today. I now have to make a new batch since they didn’t last till she arrived. They were so delicious and the kids even loved them. Thank you for posting this healthy but delicious muffin recipe. I have even shared the recipe with a lady I met at the grocery store. She was trying to help find the oat bran and asked what I was making.

  24. I made these last night with strawberries…and my husband convinced me to add chocolate chips…I said sure Id add them to half the batch- but of course once the chocolate is out I can’t resist! Anyway they turned out super delicious!!!

    As for the powedered milk- I left it out completely adn didnt add wet milk anyway…not totally sure what its for but I’m not a very scientific baker- my muffins seemed alright.

  27. 1) Is oat bran the same as oat bran cereal?
    2) Would wheat germ or oatmeal ground fine be a good substitute?
