Creamy Taco Mac

Some people are very opposed to convenience foods such as Hamburger Helper.  While I suppose in general I have turned into such a person, I do think that those types of products have their place.  Obviously they are convenient, but they can also be a starting point for someone who knows absolutely nothing about cooking to slowly learning that they are capable of making something edible.  I certainly ate my fair share of Hamburger Helper growing up and during college and you know, it really doesn’t taste all that bad.  My culinary interests clearly have grown far beyond the boxed food realm, but every once in a while I crave the old childhood favorite.  Now that I tend to avoid most processed foods though, I opt for this homemade version instead.  With multi-grain pasta, ground turkey and homemade taco seasoning, this is a much healthier copycat that tastes better than the boxed version.  I made a few minor changes to add a bit more flavor, and I also reduced the liquid a bit to thicken the sauce.  This is a great meal that is bound to be a crowd-pleaser.

Creamy Taco Mac

Ingredients:
1¼ lbs. ground turkey
8 oz. dry pasta shapes
1 small onion, chopped
1 clove garlic, minced
1 (14 oz.) can diced tomatoes, drained
4 tbsp. taco seasoning
3 oz. cream cheese
½ cup sour cream
Salt and pepper
Shredded cheddar cheese (optional)

Directions:
Bring a large pot of water to boil.  Cook pasta according to the package directions.  Drain, reserving ½ cup of pasta water.  Set aside.

Meanwhile, in a large skillet or sauté pan, cook the ground turkey over medium-high heat until no longer pink.  A few minutes before the turkey is cooked through, add the chopped onion to the skillet.  Once the turkey is cooked through, mix in the garlic and cook until fragrant, about 30 seconds.  Mix in the diced tomatoes and taco seasoning and let simmer over medium heat for about 5 minutes.  Stir in the cooked pasta, cream cheese, sour cream and reserved pasta water, and continue stirring until the cream cheese is melted and the sauce is well blended.  Season with salt and pepper to taste.  Simmer over medium-low heat 3-5 minutes to reduce the sauce a bit.  Remove from the heat and top with shredded cheddar cheese, if desired.

We haven’t had anything near this flavor profile in months, and after so serendipitously finding cheddar cheese (finally!) this would be a very welcome surprise for my husband for sure! I have two small quick questions – is that cilantro that you garnished with? and what do you think about adding in a few green chiles too?

      Yep, I used cilantro to garnish. It was a nice addition. I think green chiles would be a great mix-in!

  15. Great idea! I too tend to turn my nose up at boxed foods and prepared items, however, I have to come clean to crraving some Hamburger Helper now and then. I’ll definitely be trying this – I wonder if anyone has a homemade recipe for the cheeseburger macaroni….that was always my favorite.

  17. I usually avoid boxed meals too. But recently my Dad gave me four boxes of Kraft macaroni and cheese. I tell ya, it has been so good and I have enjoyed the heck out of some powdered cheese sauce. Don’t tell anybody!

    • Hollie, sure, you can always sub them interchangeably, it just won’t be as healthy. If I were you, I would just use the turkey. They probably wouldn’t even notice if you didn’t tell them. I wouldn’t!

    • Erika, I don’t know, that’s what gives it the creaminess. I guess you could just add more sour cream but I’m not sure how that would taste or if the texture would be right.

  37. This post was timely. We were hungry and feeling quite tired. We had everything on hand and it was very tasty.

    One method I changed was with the meat. I browned the meat, added the seasoning, then added 3/4 cup of water, turned the heat on medium-low and allowed the flavors to absorb for 30 minutes.

    I’ve found that it helps the flavors incorporate deep into the meat grounds and increases the flavor.

  38. I made this on Friday night and it was great! It also warmed up perfectly the next day. One suggestion: get rid of the turkey fat before adding the onions. Leave just enough to coat the onions. I was able to drain almost 1/4 of a cup of fat!

  54. I will admit I was slightly skeptic when I first read this as I despise boxed meals, but when a Sunday night rolled around with little time to cook I decided to give it a go. My 3yo son ate this meal faster than he’d ever eaten anything in his short life and even ate seconds! It was so tasty and just full of flavor. The cream cheese really made it. We didn’t have all the ingredients to make your taco seasoning so I used some Napa Valley Mexican Fiesta in place and it was great. Thank you for providing such quick and delicious meals that appease even the pickiest of eaters. 🙂
