Gingerbread Waffles

Do you remember me telling you about my son, the little waffle monster?  Yeah, that title still stands.  This kid just plain loves waffles.  Since it is now officially the holiday season I’ve been craving gingerbread something fierce, and these seemed like a great way to please both mom and kiddo.  The recipe is not so different from a regular waffle batter, but the addition of fall spices and molasses lends that warm, spicy gingerbread flavor.  The smell of these cooking and the sound of The Nutcracker was a lovely way to welcome in the holiday season.

Not surprisingly, these were a big hit all around.  The full recipe made about 10 waffles in our waffle maker.  Normally I would halve such a recipe for our family, but lately whenever we make a batch of pancakes or waffles we go ahead and make the entire recipe and then freeze the leftovers.  It’s nice to be able to pull a single frozen waffle or pancake from the freezer whenever you want a quick breakfast a little more exciting than cereal, or when the child who already had a plate of scrambled eggs and fruit declares that he is still “horngry”.

Gingerbread Waffles

2 cups all-purpose flour
¼ cup sugar
1 tsp. baking powder
1 tsp. baking soda
¾ tsp. salt
1½ tsp. ground cinnamon
1 tsp. ground ginger
¼ tsp. grated nutmeg
¼ tsp. ground cloves
4 large eggs
6 tbsp. unsalted butter, melted and cooled
1 cup milk
½ cup sour cream
3 tbsp. unsulfured molasses

In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, and spices.  Whisk to blend.  In a medium bowl, combine the eggs, butter, milk, sour cream and molasses and whisk to blend well.  Add the wet ingredients to the bowl with the dry ingredients and whisk to combine until all the dry ingredients are incorporated.

Preheat a waffle iron.  Fill waffle wells and cook according to the manufacturer’s instructions.  Cook until crisp and golden.  Serve immediately.

I love anything Gingerbread whereas my husband really doesn’t so I was planning to freeze the leftovers so I can have them whenever I want to. I imagine that works great with a little Waffle Monster in the house too!

    • It’s a Krups model I think, but the waffles actually aren’t that big. I really want a WaringPro which is highest rated by Cook’s Illustrated. We bought one for my father in law for Christmas a couple of years ago and it makes the best waffles ever.

  29. Delicious! The WaringPro Waffle Maker also works great for making homemade waffle cones for ice cream. It’s tricky to do at first, but so worth it…especially with homemade ice cream. Happy eats!

I assumed she didn’t like it b/c I had smothered them in homemade whipped cream & she took one bite and declared “I’m all done.” However, she came back and gobbled down a plain one a few minutes later … with the pear no less. She (& I) loved the pics. Very very yummy and festive breakfast!

  33. So, I finally got around to making these this morning. The only change I made was 1 cup of whole wheat flour and 1 cup of cake flour. I usually make my waffles with all whole wheat flour, but I figured I’d do a half and half combo with cake flour in order to maintain the textural qualities. They were quite tasty, and I think everyone absolutely loved them. Apart from that, I realized I need to experiment with my normal waffle batter. I’ve realized the recipe I have is more like a pancake cooked in a waffle iron, and I noticed that your recipe mostly has the same amount of fluids in different proportions. Definitely want to see what I can do with my normal waffles. Oh! And I noticed my waffles seemed soggier when coming out of the waffle iron, but they were perfect after staying toasty in the oven. Usually, they come out of the warm oven feeling too crispy, so I’m very impressed with the final product. Thanks for sharing and for inspiring me!
